Yes, separated by spaces.  E.g.,

setenv COIN_SKIP_PROJECTS "Cbc Clp"   for tcsh

or

export COIN_SKIP_PROJECTS="Cbc Clp"  for bash and sh

(to pick the most popular examples... ;)

I will try to update the wiki documentation on this soon...
